This arugula salad takes your side dinner salad to the next level. It is truly my go-to salad at home and when I need to contribute a dish when I'm going to a friend's or family's house. It takes about 10 minutes to make but it tastes like you put way more effort into it.

1/4 cup Blue Diamond, Smokehouse Almonds, roughly chopped
2 tablespoons olive oil
Juice from 1/2 lemon
1/3 tablespoon, Dijon mustard
1 garlic clove, minced
Salt and Pepper to taste
3 handfuls of arugula lettuce
1/2 cup shaved parmesan cheese
In a medium-size bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, and salt and pepper. Add the arugula lettuce and toss it together. Add half of the parmesan cheese and lightly toss again. Transfer the salad to your serving dish. Top the salad with the remaining cheese and chopped almonds.
