Roasted Cauliflower

Who liked cauliflower growing up?  NO ONE!  I sure didn’t and I don’t know anyone who did.

It’s an underrated vegetable.  You need to give it a chance.  Cook it right and you will fall in love.  Make it beautiful and you will be able to get your friends and family to eat it too.

Roasted Cauliflower

Prep Time 10 min Total Time 1 hr

Ingredients

1 Whole cauliflower

2 Tbs Olive Oil

Salt and Pepper

Parmesan

Instructions

Preheat oven to 400°.

Cut the stem and leaves off the cauliflower.  Make sure to keep the head whole.  Soak the whole head in water to insure a good wash.  Pat dry and place on a baking sheet.  Coat well with oil and sprinkle with salt and pepper.  Cover with foil and back for 30 to 40 minutes.  Remove the foil and bake for another 10 minutes.

Serve whole or cut into large slices.  You will need to add more salt and pepper to taste.  The inside will need the extra seasoning.  Sprinkle with parmesan to garnish.
