After trying this recipe, you may never order a bone marrow appetizer in a restaurant again. I have a hard time going to a steakhouse and ordering a nice filet or ribeye because it's just too easy to make it myself. Bone marrow falls on this same list of items I just can't pay someone to make for me.
Bone marrow takes every dish over the top. It's the perfect bite when eating Oso Buco and it makes a wonderful pot of stock. It will even take a burger to the next level. Just add some marrow to your hamburger patty and your friends will go crazy at your next BBQ. So why not just slap some marrow on bread and pour a glass of wine.
I prefer buying my bones cut lengthwise. However, I can only find them cut this way at a true butcher shop. Most regular grocery stores will sell them cut across the bone, like the ones I used in this post. If you don't see them in the meat section, just ask someone in the meat department. They may just have them in the back or can tell you when they will get more. I often buy a few packs and put them in my freezer. I pull them out for a last minute effortless appetizer.
Roasted Bone Marrow

Ingredients
4 bones with marrow
2 cloves of garlic, minced
Pinch of salt and pepper
Pinch of dried thyme
Pinch of dried rosemary
Parsley for garnish
Instructions
Preheat oven to 400°
Place all of the bones in an oven safe dish with the marrow side up. Sprinkle the garlic, thyme, rosemary, salt, and pepper over all of the bones. Bake on the center rack for 20 minutes. The marrow should be bubbling but not spilling over.
Garnish with fresh parsley and serve hot with bread.
